 Chicken Curry with Zero Oil: A Healthy and Delicious Recipe

Ingredients:

Pressure cooker base

• 2 Onion 

• 600g tomatoes and 8 mid-sized ones

• 10 cloves of garlic

• 1green chilli, and an extra to make it spicy

• 3 kashmeri fried chilli

• 8 cashew

• 3 cloves

• 3 cardamom pods

• 1/2 cup water


Spices + mix ins

• 1 tbsp red chilli powder

• 1/4 tsp Cinnamon powder ( optional )

• 1tsp garam masala

• 1tsp coriander powder

• 1tbps tomato paste

• 1tbps kasthuri methi

• 1tbps cream 

salt ( to taste)


Merinade - you can around the spices as per your preference of flavours

 • 1/2 hung curd or Greek yogurt

 • 2 tbps ginger garlic paste

 • 1 tbps red chilli powder

 • 1 tsp haldi powder

 • 1 tsp garam masala

 • 1 tbps caoiander powder

 • 1tbps jerra powder

 • salt (to taste)

 • 400 gm chicken breast, cubed or 400 GM paneer, cubed


Method 

1. Mix all the ingredients in the merinade and combine with the chicken, set aside in fridge for 1-2 hours

2. Add all the ingredients for pressure cooker base in the cooker and cook for 3 whistle, switch off and set aside

3. Once cooled, puree the mix with little water ( the amount of water depends on how water your tamotoes are)

4. Add the puree to the saucepan and add the spices and mix ins aprart kasthuri methi and cream and allow to simmer for 15 - 20 mins stirring regularly.

5. While that simmering, add chicken to a non stick sauce pan, you won't need to coat and pan since it's non stick and your chicken / paneer won't stick yogurt helps here

6. Once the chicken is cooked, add it to the curry base and mix in the kasthuri methi and fresh cream.

7. Serve with the big sprinkle of finely chopped coriander.
